Ingredients:
- 8 Large Potato's or 10 Medium to Small Potato's ( I use red)
- 1/4 cup Fat Free Sour Cream
- 1/4 cup Light Butter
- 6 Slice Low Fat/Sodium Bacon; Diced, Browned and Drained (What i used was 40% less fat/Low Sodium)
- 1 Bag Fat Free Cheddar Cheese*1 3/4 Cups*
Directions:
- Peel, And Dice Potato's. Boil til fork tender. Drain.
- Return to pot mix in all the sour cream, half cheese, all the butter, and half bacon. Mix well.
- Put in a Sprayed Casserole dish. Top with remaining bacon and cheese. Bake at 375 for 30 mins.
