Roasted Potato's & Onions
This is so simple but sooo good!!!
Add as many potato’s as you need ( I used small potato’s and just halved them) Make sure to wash and try them well!! After that you want to wedge an onion! Combine potato’s and onion in a bowl drizzle with olive oil just enough to coat! Season with salt, pepper, and any other seasoning you would like! Lay on a sheet tray lined with aluminum foil. Bake at 400 for 15 to 20 mins or until fork tender and browned!
Sometimes if I am in a rush I will used whole canned potato's as well! For canned potato's just cut them in half, season, add onions, and olive oil and do that same as the others!! May not take as long!
Roasted Chicken w/ Stuffing
The one thing I LOVE is a whole roasted Chicken! With this one I stuffed it! Some time's I toss some potato's and onions in some seasonings like salt, pepper, garlic powder, and place them around the bottom of the chicken while its baking that is awesome as well!!
Ingredients:
- 1 Whole Chicken (Mine was about 5 pounds)
- “Seasoning for chicken” *You can use what you like this is what I used*
- Goya Adobo All Purpose Seasoning
- Paprika
- McCormick Rotisserie Chicken Seasoning
- Stove Top Stuffing Chicken Flavored (I get low sodium)
Directions:
Pre-Heat Oven to 375
- Wash, Clean and Dry Chicken with a Paper Towel. Season with seasonings inside and out just to cover the chickens surface *DO NOT FORGET TO SEASON THE INSIDE OF YOUR CHICKEN IF YOU DO IT WILL NOT HAVE MUCH FLAVOR*
- Prepare Stuffing according to Package Directions. Then Stuff Chicken.
- Bake at 375 for 20 mins per pound! I baked my in a Roasting pan without the top on! Internal temp should me 180... I cooked my chicken 90 mins and it was perfect… The rule of thump is 20 mins per pound!!
Bow Tie Lasagna
I found this on the Tasty Kitchen site. I changed a few things here is my version.

- 1 pound LEAN Ground Beef
- 5 cups Bow Tie Noodles
- 3 cups Spaghetti Sauce (I used Hunt's Meat Sauce)
- 1 Tablespoon Olive Oil
- 1 Teaspoon Salt
- 1/2 Teaspoon PepperPublish Post
- 4 Garlic Cloves; minced
- 1/2 cups Mozzarella Cheese
- 1/2 cups Ricotta Cheese
Directions:
- Cook Noodles and Drain. Set aside.
- In same pot add in Ground Beef and drain. Set aside.
- In same pot heat olive oil and saute garlic for 1 min. Add in pasta and saute for another minute.
- Add in browned meat, spaghetti sauce, salt, pepper, mozzarella cheese, and ricotta cheese. Toss until everything is well mixed and cheese is melted. Serve!
Homemade Stove Top Mac & Cheese
Ingredients:
- 3 Tablespoons Butter (I used Light Country Crock)
- 2 Cups of Milk (I used Skim)
- 3 Tablespoons of Cornstarch
- 2 Cups Sharp Cheddar Cheese (I used the 2%)
- 3 Cups Pasta (I used Ronzoni Smart Taste)
Directions:
- Cook, Drain & Set aside Pasta. Melt Butter in a sauce pan.
- Mix Corn Starch and Milk together. Then pour it into the sauce pan with the melted butter. Bring to a boil. Mixing constantly until thickened. Add in Cheese. Turn to low and cook on low for 10 mins keep a close eye stirring every so often.
- Add in Pasta. Mix well. Let sit for 5 mins then serve!
Baked Potato Wedges
Ingredients:
- As many baking potato's as you need. I say 1/2 to 1 potato per person according to the size
- Olive oil
- Salt
- Pepper
- Garlic Powder
- Goya Adobo All Purpose Seasoning or Your favorite French Fry Seasoning (A nice season salt would work as well)
Directions:
- Wash, Wedge Potato's (I cut the potato in have and do straight cuts down)
- Dry potato's well with a paper towel. And put in a bowl.
- Toss potato's with olive oil and seasonings. Just enough olive oil to coat.
- Place on a baking sheet and bake at 425 for 15 to 20 mins or until potatoes are fork tender and browned!
Kielbasa w/ Pepper & Onions
Ingredients:
- 2 Lbs of Polish Kielbasa; Sliced
- 1 Large Onion; Cut in strips
- 1 Large Green Bell Pepper; Cut in strips
- 2 Tablespoons Olive Oil
Directions:
- Brown Sausage in 1 Tablespoon olive oil. Drain on paper towel.
- Add onions and pepper to same pan with 1 Tablespoon of olive oil. Til Browned.
- Add Sausage to Peppers and Onions! Stir turn to low and cover let sit on low for 10mins. Enjoy.
Hamburger & Potato Casserole
Ingredients:
- 3 Lbs lean ground beef; Browned & Drained ( I use 97/4 )
- 1 Large onion; diced, minced, or grated (Brown this with your ground beef)
- 1 Can Cream of Chicken (Fat Free)
- 1 Can Cream of Mushroom (Fat Free)
- Salt & Pepper to taste
- 4 Can's Sliced Potato's
- 2 Cups Cheddar Cheese (I used 2%)
*Now if you want to use real potato's here is what you need to do*
Peel and Slice your potato't in about 1/2 inch rounds. Rinse. Then boil for about 10 to 15 mins. Just until the potato's are little soft but a little firm also. You do not want them to far apart cause you have to layer them in the casserole. Then go on with the rest of the Directions!!
Directions:
- Mix Browned Beef and Onion, Cream of Chicken, Cream of Mushroom, Salt and pepper together Well!!
- In a sprayed casserole dish. Layer half the ground beef mixture on the bottom of the casserole dish. Then two cans of the sliced potato's. Season potato's with salt and pepper. Then 1 cup of cheese. Then the rest of the beef mixture. Rest of potato's. Then top with the rest of the Cheese.
- Bake at 375 for 30 mins or until cheese is lightly browned and casserole is bubbly.
