Cinnamon Sugar Chips

These are served at a local Mexican restaurant.  My aunt introduced me to these and I have been hooked ever sense.  You could also leave the cinnamon sugar off and season with some salt, or other seasons of you would like.  Also if you wanted to turn this into a full desert after you shake in the cinnamon sugar lay on a plate and drizzle w/ a little honey and/or chocolate syrup. AMAZING AND SO SIMPLE.

Cinnamon Sugar Chips



Ingredients:
Tortilla's
Oil (For frying)
Cinnamon Sugar (1/2 cups sugar mixed with 1 tablespoon cinnamon)

Directions:
  1. Cut tortilla's in half, then in triangles.
  2. Put cinnamon sugar in a shallow dish.
  3. Heat oil. You want it hot enough that it only takes a minute per side. Fry till lightly browned on each side.
  4. Drain on paper towels.
  5. Roll in cinnamon sugar. And munch away I promise you will be addicted just like I am!!

Turkey Taco Lettuce Wraps


I love taco's but sometimes I really just don't want the heaviness the tortilla gives it so I decided why not make a lettuce wrap out of it.  All the same great taste in a lighter, fresher, and to me tastier way. Of course you could use lean ground beef or ground chicken if you would like to would be just as good!!

Turkey Taco Lettuce Wraps

Ingredients:
  • Romaine Hearts
  • 1Lb Ground Turkey
  • 1 1/2 Packages of Low Sodium Taco Seasoning (You can just use one but I like to use 1 1/2)
  • Cheese
  • Fat Free Sour Cream
  • Tomato's

Directions:
  1. Brown turkey, drain if needed, add seasonings and water according to package directions.
  2. Assemble Lettuce, taco meat, cheese, sour cream, tomato's and anything else you would like.



Simple Chicken Fried Rice

This recipe is so simple and great for a busy night dinner that only takes 10 to 15 minutes.  So much flavor and very few ingredients.  You could serve this just by itself because he has everything you need meat, veggies, and a starch.  If your a bread person like my mom then you would love to serve this with some good old corn bread.


Simple Chicken Fried Rice
{Serves 4 to 6}
Ingredients:
  • 1/2 to 1lb of Boneless Skinless Chicken breast
  • Seasonings (of your choice, I used salt, pepper, and some rotisserie chicken seasoning)
  • Oil (Just enough to brown chicken)
  • 2 packages of  Knorr Asian Sides Chicken Fried Rice
  • 1 cup frozen peas and carrots
  • 1/4 + 2 tablespoon Low Sodium Soy Sauce
  • 3 1/4 cups water
  • 1/2 teaspoon black pepper

Directions:
  1. Cut chicken in bit sized pieces. Season. And brown in a little oil. Remove from pan and set aside.
  2. In a pot combine chicken fried rice packages, peas and carrots, soy sauce, water, and pepper.
  3. Bring to a boil. Reduce to low. Cover and cook 7 minutes.
  4. Add chicken. Cook 2 more mins. And your done!  ENJOY!!



Cheese Stuffed Garlic Biscuits



I thought of this one night out of the blue and decided to give it a try.  Its Delicious and goes great with so many different things. Very simple and fast. Instead using the string cheese you could use any type of block cheese cute to the desired amount. This is great with monetary jack cheese which is my favorite. Cheese Stuffed Garlic Biscuits

Ingredients:
  • 1 (8 count) Can Refrigerated Biscuits; I used Grand Home-style
  • 4 to 8 String Cheese, I used light
  • 3 Tablespoons Butter; I used light also
  • 1 large clove of garlic; Crushed

Directions:
  1. Preheat oven to 350
  2. Prepare some garlic butter by melting butter in a small sauce pan. Add 1 large clove crushed garlic and let sit on low until you do steps 2 thru 5.
  3. Flatten Biscuits just a little.
  4. Cut Cheese in half.
  5. Place ½ or 1 whole string cheese in the middle of the biscuit. I used 1 whole one. I cut it in half and lay them side by side.
  6. Form the biscuit around the cheese. Make sure to pinch the seams really well.
  7. Place them seam side down on a cookie sheet. Brush with garlic butter and bake at 350 for 13-16mins or until browned. When they come out brush with the remaining garlic butter if you would like :)

Amazing Homemade Brownies


 So, as I sat at home Friday night I got the hankering for some brownies.  Store was closed so I decided that I would search online for a easy homemade brownie recipe w/ coco powder.  Thank goodness I did because I found a recipe that is beyond simple and out of this world good.  I will never make boxed brownies again NEVER.  These were the perfect ooey gooey brownies that has the little crunch layer on top and don't get me started on the edge's *Wipes drool from chin*  The original recipe source is All recipes and the recipe is called Mmm-Mmm Better Brownies. I only made one change and that was using canola oil, and lowering the amount of sugar. I hope you enjoy these as much as I did!

Amazing Homemade Brownies

Ingredients:
  • 1/2 cup canola oil
  • 3/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup all purpose flour
  • 1/3 cup unsweetened coco powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cups chopped nut, optional

Directions:
  1. Preheat oven to 350
  2. Mix oil, sugar, vanilla, and eggs just til combined.
  3. In a separate bowl combine the flour, coco, baking powder, and salt.
  4. Mix the wet and dry ingredients together. Fold in nuts if you are using them.
  5. Pour in a greased 8x8 or 9x9. For thicker brownies use the 8x8 and for thinner *like mine* use the 9x9
  6. Bake for 20 to 25 mins. The thicker they are the longer the back time will be. Mine baked 21 mins and were perfect.
