Chili Cheese Dog Casserole

This is a great casserole recipe for a busy week night meal.  You can make it as healthy as you would like by using fat free, whole grain, and turkey options.  A great side for this is some corn on the comb or a nice light salad.  I hope you give this recipe a try and enjoy it as much as me and my family did. ENJOY!

Chili Cheese Dog Casserole

Ingredients:
  • 2 Cans of your favorite Chili (I use homemade or Hormel Turkey *no beans*)
  • 1 Pkg of your favorite hot dog (I use turkey)
  • Ketchup & Mustard (Amount will vary)
  • 8 Flour Tortillas
  • 2 cups (2%) Mexican Blend Cheese

Directions:
  1. Preheat oven to 425.
  2. Spread 1 can of chili the bottom of a 9x13 inch baking dish.
  3. Spread the amount of mustard and ketchup you would like on your tortillas then roll up hot dog inside.
  4. Place in baking dish, seam side down, on top of chili.
  5. Top with remaining can of chili and sprinkle with cheese. Cover baking dish with aluminum foil, and bake at 425 for 20 to 30 mins. Last 5 mins turn to broil to get brown top.
